The Pantry: How I Store and Stock Food on the Road

This is by far the area that has been the hardest to figure out. I'm not necessarily picky about what I eat, but I do try to stick within a certain realm of what I eat. Some of that is hard to find when I'm out in the middle of nowhere. When I'm truly active, I can put away 5,000+ calories a day pretty easily, which means I burn through food pretty quick.
Starting off, I had everything filling up about half my backseat floorboard. I definitely had anything I might be in the mood for, but I caught myself moving it back and forth every time I needed to use my back seat — which got old.

So I downsized one level, got rid of my smallest tote, and moved everything across the back quarter of my pickup bed setup with the open section next to the cab. It still gave me enough options to choose from — I had the basics on hand to cover most anything — and yet I still caught myself moving it around... a lot. So I downsized yet again. I'm now down to 2 BearVaults. By doing this I have to go to the store at least twice a week. I won't make it 7 days without going into town.
My long-term goal is to downsize my rig even further to an SUV of some sort — I always have that in the back of my mind.
My food is now located on the floor of my truck on the bottom shelf of my setup. I already had one container that I use for longer backpacking trips, so I repurposed that one and added another.
Things that make this possible:

For some of my harder-to-find items, I keep a backstock at the house and my mom will send me care packages on the road.
Sprouts and other natural grocery store-type places sell things in bulk, so I can buy exactly how much I need.
Amazon Lockers — I use these so much on my travels! You can order almost anything that'll fit in their locker space, have it shipped to a locker location, and pick it up waiting for you when you arrive.
